Sweet and Sour Spring/Summer Salad

Ingredients

For the salad (serves 2-4):
  • 4 cups baby spinach, watercress, or arugula
  • ½ cup fresh mint, finely chopped
  • 1 red onion, sliced
  • 2 peaches or nectarines, sliced
  • 2 ripe heirloom tomatoes, sliced
  • 2 large cucumbers, sliced
  • 4 oz fresh mozzarella, sliced
  • 1 large bunch fresh basil
For the dressing
  • ¼ cup balsamic vinegar
  • ¼ cup lemon juice
  • ¼ cup walnut oil
  • 1 clove garlic, crushed or minced
  • ½ teaspoon sea salt
  • 1 teaspoon dijon mustard
Instructions
  1. First, make the dressing: Combine all ingredients in a jar with a tight fitting lid, and shake until well combined.
  2. Pour ⅓ of the dressing into a large bowl, and toss with the greens, mint, and onions.
  3. Arrange sliced peaches, tomatoes, cucumbers, mozzarella, and basil on top of the salad.
  4. Drizzle with a bit of the remaining dressing and serve, with additional dressing on the side, for people who like their salads more dressed.
